Tagine Kefta (Meatball Tagine)
Morocco's most popular home-cooked tagine — spiced lamb meatballs in a vibrant tomato-cumin sauce with eggs poached on top.

Ingredients
- 500g ground lamb or beef
- 1 onion, grated
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp cinnamon
- Cilantro, parsley, salt, pepper
- Sauce: 400g crushed tomatoes, 4 cloves garlic, 1 tsp cumin, 1/2 tsp chili
- 4 eggs
- Olive oil
Instructions
- Mix meat with grated onion, spices, and herbs. Form into walnut-sized balls.
- Make sauce: cook tomatoes with garlic, cumin, and chili until thickened.
- Nestle meatballs into the sauce. Cover and simmer 15-20 minutes.
- Make wells in the sauce. Crack eggs into them.
- Cover and cook until eggs are just set, about 5 minutes.
- Scatter with cilantro. Serve straight from the tagine with crusty bread.
