Tej (Honey Wine)
A traditional Ethiopian honey wine flavored with gesho (hops-like shrub), ranging from sweet to very dry.

Ingredients
- 1 part Honey
- 3 parts Water
- Gesho (Rhamnus prinoides) stems and leaves
Instructions
- Mix honey and water in a large clay or glass container.
- Add the gesho and cover with a cloth.
- Let ferment in a dark place for several weeks.
- Remove the gesho and strain the wine.
- Serve in a "berele" (flask with a long neck).
