Teriyaki Chicken
The authentic Japanese version of the world-famous dish — chicken thigh pan-seared until the skin is crispy, then glazed with a simple reduction of soy sauce, mirin, sake, and sugar.

Ingredients
- 2 chicken thighs (skin-on, bone-out)
- Sauce: 2 tbsp soy sauce, 2 tbsp mirin, 2 tbsp sake, 1 tbsp sugar
- Grated ginger (optional)
Instructions
- Prick chicken skin with a fork. Pan-fry skin-side down over medium heat until crispy and fat is rendered.
- Flip and cook until nearly done. Pour off excess fat.
- Pour the sauce ingredients into the pan. Simmer until the sauce thickens and coats the chicken in a glossy glaze.
- Slice into bite-sized pieces and serve with the remaining glaze.
