Teriyaki Chicken

The authentic Japanese version of the world-famous dish — chicken thigh pan-seared until the skin is crispy, then glazed with a simple reduction of soy sauce, mirin, sake, and sugar.

  1. Prick chicken skin with a fork. Pan-fry skin-side down over medium heat until crispy and fat is rendered.
  2. Flip and cook until nearly done. Pour off excess fat.
  3. Pour the sauce ingredients into the pan. Simmer until the sauce thickens and coats the chicken in a glossy glaze.
  4. Slice into bite-sized pieces and serve with the remaining glaze.
