Texas-Style Dry Rub
Simple Texas brisket rub of only coarse salt and black pepper — the ‘dalmatian rub’ that lets the beef flavor shine through the smoke.

Ingredients
- 1/2 cup coarse kosher salt
- 1/2 cup coarsely ground black pepper
- Optional: 2 tbsp garlic powder, 1 tbsp paprika (for Central TX style)
Instructions
- Mix salt and pepper together.
- That’s it for traditional East Texas style.
- Apply very generously to all surfaces of brisket 1-2 hours before smoking.
- The pepper-salt crust forms the bark during the long smoke.
