Kai Jeow Moo Sab (Thai Minced Pork Omelet)
A humble but beloved Thai comfort food — an airy, crispy-edged omelet stuffed with savory minced pork and seasoned with fish sauce.

Ingredients
- 3 large eggs
- 100g minced pork
- 1 tbsp fish sauce
- 1/2 tsp lime juice (helps make it airy)
- 1 scallion, sliced
- 1/2 cup vegetable oil for deep-frying
Instructions
- Whisk eggs, minced pork, fish sauce, lime juice, and scallions in a bowl until frothy.
- Heat oil in a wok or small pan until very hot (shimmering).
- Pour the egg mixture in from a height of about 6 inches to create bubbles.
- Flip once the bottom is golden and crispy (about 2 minutes).
- Cook the other side for 1 minute.
- Drain on paper towels and serve over hot jasmine rice with Sriracha sauce.
