Senegal's spectacular national dish — broken rice cooked in a rich tomato sauce with stuffed fish, cassava, eggplant, and other vegetables.

Ingredients
- 3 cups broken rice
- 1kg firm white fish (grouper or sea bass)
- Herb stuffing: parsley, garlic, scotch bonnet
- 200g tomato paste
- 1 eggplant, quartered
- 1 cassava, peeled and quartered
- 2 carrots, halved
- 1 cabbage, quartered
- 100ml peanut oil
- Tamarind, dried fish, salt
Instructions
- Make herb stuffing by blending parsley, garlic, and peppers. Stuff into fish slits.
- Fry fish until golden. Set aside.
- In same oil, sauté onions and tomato paste until deeply caramelized.
- Add water, tamarind, and vegetables in order of cooking time.
- Remove cooked vegetables and fish. Cook rice in the flavored broth.
- Plate rice in a mound, arrange fish and vegetables around it.
