Senegal's spectacular national dish — broken rice cooked in a rich tomato sauce with stuffed fish, cassava, eggplant, and other vegetables.

Instructions

  1. Make herb stuffing by blending parsley, garlic, and peppers. Stuff into fish slits.
  2. Fry fish until golden. Set aside.
  3. In same oil, sauté onions and tomato paste until deeply caramelized.
  4. Add water, tamarind, and vegetables in order of cooking time.
  5. Remove cooked vegetables and fish. Cook rice in the flavored broth.
  6. Plate rice in a mound, arrange fish and vegetables around it.
