Tomatokeftedes
Santorini's famous tomato fritters — tiny island tomatoes mixed with mint, onion, and flour, fried into crispy rounds.

Ingredients
- 500g ripe tomatoes, diced small
- 1 small onion, grated
- 2 tbsp fresh mint, chopped
- 1 tbsp fresh parsley
- 150g flour (plus more as needed)
- 1 tsp baking powder
- Salt and pepper
- Olive oil for frying
Instructions
- Mix diced tomatoes with onion, mint, and parsley.
- Add flour, baking powder, salt, and pepper. Mix to a thick batter.
- If too wet, add more flour. If too dry, the tomato juice is enough.
- Heat 1cm olive oil in a frying pan.
- Drop tablespoons of batter into hot oil. Flatten slightly.
- Fry 3-4 minutes each side until golden.
- Drain on paper. Serve hot with tzatziki.
