Tuwo Shinkafa & Miyan Kuka
A traditional Northern Nigerian meal consisting of soft, mashed rice balls (Tuwo) served with a dark, savory soup made from dried Baobab leaves (Kuka).

Ingredients
- 2 cups Shinkafa (short-grain rice)
- 1/2 cup Kuka powder (dried baobab leaves)
- 500g Beef or Lamb
- 1/2 cup Palm oil
- 2 tbsp Ginger-garlic paste
- Seasoning cubes and salt
- Dry fish
Instructions
- Boil rice with plenty of water until very soft. Mash with a wooden spoon until it forms a sticky dough. Mold into balls.
- For the soup: Boil meat and dry fish with spices until tender.
- Slowly whisk in the Kuka powder while stirring constantly to avoid lumps.
- Add palm oil and simmer on low heat for 10 minutes.
- Serve the Tuwo balls with the Miyan Kuka.
