Ube Halaya (Purple Yam Jam)

Filipino purple yam jam — vibrant violet, sweet, and creamy, used in ice cream, cakes, and as a standalone dessert.

Instructions

  1. Boil ube until very tender. Mash or blend until smooth.
  2. Combine mashed ube, coconut milk, and condensed milk in a heavy pot.
  3. Cook over medium-low heat, stirring constantly, for 30-40 minutes.
  4. Add butter and vanilla. Continue stirring until thick and pulls away from the pan.
  5. Transfer to a greased mold. Cool and refrigerate.
  6. Unmold and top with toasted coconut flakes.
