Ube Halaya (Purple Yam Jam)
Filipino purple yam jam — vibrant violet, sweet, and creamy, used in ice cream, cakes, and as a standalone dessert.

Ingredients
- 500g ube (purple yam), boiled and mashed
- 1 can (400ml) coconut milk
- 1 can (300ml) condensed milk
- 50g butter
- 1 tsp vanilla extract
- Toasted coconut flakes
Instructions
- Boil ube until very tender. Mash or blend until smooth.
- Combine mashed ube, coconut milk, and condensed milk in a heavy pot.
- Cook over medium-low heat, stirring constantly, for 30-40 minutes.
- Add butter and vanilla. Continue stirring until thick and pulls away from the pan.
- Transfer to a greased mold. Cool and refrigerate.
- Unmold and top with toasted coconut flakes.
