Instructions

  1. Bring water to a boil in a large pot.
  2. Slowly add maize flour while stirring with a wooden spoon (mwiko).
  3. Continue adding flour and mashing against the sides of the pot until the mixture is very stiff and pulls away from the edges.
  4. Lower the heat, cover, and let steam for 5 minutes.
  5. Turn it out onto a plate and mold into a dome.
