The definitive Kenyan staple — a stiff, dough-like porridge made from maize flour and water, serving as the primary starch for most meals.

Ingredients
- 3 cups White maize flour (cornmeal)
- 4 cups Water
Instructions
- Bring water to a boil in a large pot.
- Slowly add maize flour while stirring with a wooden spoon (mwiko).
- Continue adding flour and mashing against the sides of the pot until the mixture is very stiff and pulls away from the edges.
- Lower the heat, cover, and let steam for 5 minutes.
- Turn it out onto a plate and mold into a dome.
