Varenyky (Ukrainian Dumplings)

A cornerstone of Ukrainian cuisine — crescent-shaped dumplings filled with savory or sweet ingredients, boiled and served with plenty of smetana (sour cream).

  1. Make the dough: Mix flour, egg, water, and salt. Knead until elastic. Cover and rest for 30 minutes.
  2. Prepare filling: Mash the boiled potatoes. Mix in half of the sautéed onions, cheese (if using), salt, and pepper.
  3. Roll out the dough thin (2-3mm) and cut into 7-8cm circles.
  4. Place a spoonful of filling in the center of each circle. Fold in half and pinch the edges tightly to seal.
  5. Boil in a large pot of salted water. Once they float to the surface, cook for another 2-3 minutes.
  6. Remove with a slotted spoon and toss with the remaining sautéed onions and butter.
  7. Serve hot with a side of sour cream.
