Varenyky (Ukrainian Dumplings)
A cornerstone of Ukrainian cuisine — crescent-shaped dumplings filled with savory or sweet ingredients, boiled and served with plenty of smetana (sour cream).

Ingredients
- Dough: 3 cups flour, 1 egg, 3/4 cup warm water, 1/2 tsp salt
- Filling: 500g potatoes, peeled and boiled
- 1 onion, finely chopped and sautéed in butter
- 100g farmer's cheese or cheddar (optional)
- Salt and black pepper to taste
- To serve: 1/2 cup sour cream, extra fried onions or lardons
Instructions
- Make the dough: Mix flour, egg, water, and salt. Knead until elastic. Cover and rest for 30 minutes.
- Prepare filling: Mash the boiled potatoes. Mix in half of the sautéed onions, cheese (if using), salt, and pepper.
- Roll out the dough thin (2-3mm) and cut into 7-8cm circles.
- Place a spoonful of filling in the center of each circle. Fold in half and pinch the edges tightly to seal.
- Boil in a large pot of salted water. Once they float to the surface, cook for another 2-3 minutes.
- Remove with a slotted spoon and toss with the remaining sautéed onions and butter.
- Serve hot with a side of sour cream.
