  1. Mix the rice with chopped vegetables, herbs, oil, lemon, and spices. Place a spoonful of filling on each leaf and roll tightly into cylinders. Arrange the rolls in a heavy pot over a bed of potato slices. Weight them down with a plate. Simmer in water mixed with lemon juice and oil for about an hour on low heat. Serve cold.
