Warak Enab (Stuffed Grape Leaves)
Grape leaves stuffed with a savory mixture of rice, tomatoes, and herbs, slow-cooked in a tangy lemon and olive oil broth.

Ingredients
- 1 jar grape leaves, 2 cups rice (soaked), 2 tomatoes (finely chopped), 1 bunch parsley, 1 bunch mint, 1 onion, juice of 3 lemons, 1/2 cup olive oil, salt and pepper.
Instructions
- Mix the rice with chopped vegetables, herbs, oil, lemon, and spices. Place a spoonful of filling on each leaf and roll tightly into cylinders. Arrange the rolls in a heavy pot over a bed of potato slices. Weight them down with a plate. Simmer in water mixed with lemon juice and oil for about an hour on low heat. Serve cold.
