White Cut Chicken (Bai Zhan Ji)
Gently poached whole chicken served with a signature ginger-scallion oil dipping sauce.

Ingredients
- 1 small whole chicken (free-range preferred)
- Ginger, scallions, salt
- Dipping Sauce: 3 tbsp minced ginger, 3 tbsp minced scallions, 1/2 tsp salt, 4 tbsp hot vegetable oil
Instructions
- Submerge chicken in boiling water with ginger and scallions. Turn off heat, cover, and steep for 30-40 minutes until just cooked.
- Immediately plunge chicken into ice water to tighten the skin. Rub skin with sesame oil.
- Make dipping sauce: Mix ginger, scallions, and salt. Pour smoking hot oil over them to release the fragrance.
- Chop chicken into bite-sized bone-in pieces and serve cold or at room temperature with the sauce.
