Wiener Schnitzel
Austria's national dish: a thin, breaded, and pan-fried veal cutlet, served with a slice of lemon and traditional potato salad.

Ingredients
- 4 veal cutlets (about 150g each)
- 1/2 cup all-purpose flour
- 2 large eggs, beaten
- 1 cup fine breadcrumbs
- Clarified butter or oil for frying
- Salt
- Lemon wedges
- Fresh parsley
Instructions
- 1. Pound the veal cutlets until very thin (about 4mm). 2. Season both sides with salt. 3. Dredge in flour, then dip into the beaten eggs, and finally coat with breadcrumbs. 4. Heat plenty of clarified butter in a large pan. 5. Fry the schnitzels for 2-3 minutes per side until golden brown and wavy. 6. Serve hot with lemon wedges and parsley.
