Wiener Schnitzel
A classic German-Austrian favorite — a thin, breaded, and pan-fried veal cutlet. Golden, crispy, and traditionally served with a slice of lemon and potato salad.

Ingredients
- 4 veal cutlets (about 150g each)
- 2 eggs
- 1 cup all-purpose flour
- 2 cups breadcrumbs
- Salt and pepper
- Clarified butter for frying
- Lemon wedges for serving
Instructions
- Pound the cutlets thin using a meat mallet.
- Season each cutlet with salt and pepper.
- Dredge each cutlet in flour, then dip into beaten eggs, and finally coat with breadcrumbs.
- Heat clarified butter in a large pan over medium-high heat.
- Fry the cutlets until golden brown on both sides, about 2-3 minutes per side.
- Serve immediately with lemon wedges.
