  1. Pound the cutlets thin using a meat mallet.
  2. Season each cutlet with salt and pepper.
  3. Dredge each cutlet in flour, then dip into beaten eggs, and finally coat with breadcrumbs.
  4. Heat clarified butter in a large pan over medium-high heat.
  5. Fry the cutlets until golden brown on both sides, about 2-3 minutes per side.
  6. Serve immediately with lemon wedges.
