Yakisoba (Stir-Fried Noodles)
A classic festival and street food staple — wheat noodles stir-fried with pork, cabbage, and carrots in a sweet-savory sauce, topped with aonori and red ginger.

Ingredients
- 2 portions Yakisoba noodles (steamed ramen noodles)
- 150g pork belly, thinly sliced
- 2 cups cabbage, chopped
- 1/2 carrot, julienned
- Yakisoba sauce: 2 tbsp Worcestershire sauce, 1 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp sugar
- Toppings: Aonori (seaweed powder), Beni Shoga (pickled ginger), Katsuobushi
Instructions
- Heat oil in a wok or large pan. Sauté pork until browned.
- Add cabbage and carrots, stir-fry until slightly softened.
- Add the noodles and a splash of water to loosen them. Cook for 2 minutes.
- Pour in the yakisoba sauce and toss vigorously until well coated and slightly charred.
- Serve on a plate, garnished with aonori, beni shoga, and dancing bonito flakes.
