Zabaione

  1. Combine yolks and sugar in a heatproof bowl.
  2. Whisk until pale and thick.
  3. Set over a pot of barely simmering water (bain-marie).
  4. Whisk continuously while adding Marsala gradually.
  5. Whisk 10-15 minutes until tripled in volume and very frothy.
  6. Pour into glasses. Serve immediately with ladyfingers.
