Zabaione
A warm, frothy custard of egg yolks, Marsala wine, and sugar — Italy's most ancient dessert, eaten warm from a glass.

Ingredients
- 6 egg yolks
- 100g sugar
- 150ml Marsala wine (or Moscato)
Instructions
- Combine yolks and sugar in a heatproof bowl.
- Whisk until pale and thick.
- Set over a pot of barely simmering water (bain-marie).
- Whisk continuously while adding Marsala gradually.
- Whisk 10-15 minutes until tripled in volume and very frothy.
- Pour into glasses. Serve immediately with ladyfingers.
