Zagorski Štrukli
The most famous traditional dish of the Zagorje region, these thin dough pillows are filled with fresh cow cheese and baked or boiled in cream.

Ingredients
- Dough:
- 500g all-purpose flour
- 1 egg
- 2 tbsp oil
- Pinch of salt
- 250ml warm water
- Filling:
- 500g fresh cow cheese (skuta/ricotta style)
- 100ml sour cream
- 2 eggs
- Salt
- Topping:
- 200ml heavy cream
- 50g butter
- Breadcrumbs
Instructions
- Mix flour, egg, oil, salt, and water into a soft dough. Knead until smooth and let rest for 30 minutes.
- Roll out the dough thin on a floured tablecloth, then stretch by hand until transparent.
- Prepare filling by mixing cheese, eggs, sour cream, and salt.
- Spread the filling over 2/3 of the dough.
- Roll the dough using the tablecloth.
- Cut into small pillows using the edge of a plate (to seal the edges).
- For baked štrukli: Place in a buttered pan, cover with cream, and bake at 200°C for 30 minutes.
- For boiled štrukli: Boil in salted water for 15-20 minutes and serve with buttered breadcrumbs.
